Title: storing pinto beans

I'm storing pinto beans.  I was looking at the LDS guide for storing food (not my church but a great source of info) and it said that if beans have too much moisture they could grow a fungus.  It said that store bought beans are less likely to have fungus but that you should test beans before storing them.  It recommended hitting the bean with a hammer.  If it breaks into pieces then you can store it.  if it mashes flat it has too much moisture.  The beans I purchased at SAMs mashed flat.  Drying the beans looks like a big hassle.  any recommendations? 

I will store the beans in Mylar with O2 absorbers then in plastic buckets.

I've never hit my beans with a hammer although I have to confess that now I'm tempted but it would wake up DH. I've stored pinto's for a year without doing anything to them, not even mylar bags. I would assume that if you just left them alone in their original package for a while they would dry out then you could repackage them.
