The Paleo Recipe/Idea thread

I try to be some version of Paleo as much as I can. I'm always looking for ideas. I figured a thread of people's favorites could become a valuable reference for people who partake of the lifestyle. My first input: Cheesesteak Stuffed Peppers (I know a lot of people on Paleo avoid dairy, I have no problems with it, so it will be in many of my recipes.)

Brown 1# grass fed ground beef in pan with your favorite steak seasoning.
Cut tops/ membranes from 3 large bell peppers, chop flesh from tops into medium dice
Melt cream cheese ( I prefer the niche ones w/o locust bean gums, etc) into meat
Melt mozzarella or provalone into mixture
Add diced peppers
Spoon into peppers in baking dish, top with more cheese

Bake until pepper is tender. I did mine on the grill, about 4-500* for about 30 minutes worked well.

Great idea for a thread.  I am looking for Paleo recipes, I don't really have any.  I usually just do a stir fry with whatever fresh veggies and meat I can get my hands on.  I agree with you on dairy.  If you don't have a food allergy to it why not use it.  I use some cheese and butter and occasionally cream in my cooking.

ok.  We are going to try Paleo for a month.  Mostly because so many of my kids have "tummy" issues all the time, and I want to see what cutting dairy and grains will do for them.
So, tell me why you cannot have grains but you can have almond/coconut flour?  everything I read says it is because of the over processing of the grains.  But is not almond flour processed?  And how do you get coconut flour if it is not processed?

I usually make it once every 2 weeks. I tried a meatzza last week. It's a pizza with a crust made with ground beef.

That's only dinner, I usually make shakes for breakfast/lunch.

I need to eat Low FODMAP and I can't eat a bunch of other grains so I tend to eat a lower carb/low sugar diet.  I have been doing this for a year and a half so I have lots of recipes at this point.  I don't measure anything and my recipes tend to be very forgiving to variation. 

Chicken Soup
Cut all the ingredients into what ever size you like to eat.  I find it is easiest to make them all about the same size regardless of what size you pick. 
 
Homemade chicken stock.  You need enough to cover all your ingredients.
 
Chicken a pound or 2 for a large pot of soup
Parnips 1/2 a pound pealed and chopped
Carrots 1/2 a pound chopped
Celeriac 1/2 a pound pealed and chopped
Kale  1 to 2 cups chopped
Green onion 1 bunch chopped
Garlic greens 2 tablespoon dried
Dried Lovage 2 tablespoon
salt and pepper to taste

I put all the ingredients in a pot and add enough stock till everything is covered.  Bring it to a boil and cook till the chicken is cooked and the parsnips are soft.

Chocolate covered strawberries the easy way.

Wash and cut the strawberries. 
Put the strawberries on a sheet of parchment paper
Melt a good quality 90% dark chocolate and drizzle it over the strawberries. 
Serve when the chocolate hardens.

Spicy Deviled Eggs
I bring these to parties all the time so I know I have something I can eat and I have a flock of laying hens. 

This recipe is for 12 eggs
Mayonnaise
Dijon Mustard
Worcestershire sauce
Cayenne pepper powder

I steam my eggs for 25 minutes to hard boil them.  Steam them like you would veggies but they will need 20+ minutes of steam to be hard boiled. 

It is the best method I have found for backyard eggs. I do set aside eggs for 1 to weeks so they are easier to peel.  Really fresh eggs are impossible to peel when hard boiled. 

Cut the peeled eggs lengthwise and put the yolks in a bowl.
Add to the bowl of yolks
1 over flowing blob of mayonnaise from a soup spoon.
1 over flowing blob of mustard from a tea spoon
1 tsp of worcestershire sauce

Use an immersion blender to mix everything to a creamy texture.  Add more of the above ingredients if it is too dry.

Spoon the mix into the egg white halves and sprinkle with cayenne pepper.

I am posting lots of appetizers at the moment due to the holidays.  I will post more meals and side dishes as I cook them.

Bacon Wrapped Jalapeno poppers

Jalapeno Peppers
Cream Cheese
Bacon
Tooth Picks

If you have sensitive skin I strongly recommend wearing gloves to make this dish. 
Wash and cut the jalapenos in half length wise. 
remove the seeds.  I use a steel 1/2 teaspoon measuring spoon to remove the seeds.  The small spoon makes this step a lot easier. 

Fill each pepper half with cream cheese.
Wrap each cream cheese filled pepper with bacon and secure with a tooth pick.

Cook in the oven at 425 degrees till the bacon is cooked

It is recommended to not use it the first 30 days because it can be inflammatory to some people.  Many people who continue eating paleo after the whole 30 will often add some dairy and other foods they find do not bother them to increase the variety of foods they eat.
