Morning Bread recipe

Makes 1 large loaf (or 2 small)

Adapted for bread machine:

1 1/3 c. boiling water
1 egg
4 T. oil (or butter, or coconut oil)
2 T. molasses
1 1/4 tsp. salt
2 T. sugar
 3/4 - 1 c. oatmeal (If using Quick oats, only 3/4 c. For old fashioned, 1 c.)
1/3 c. powdered milk
1 1/4 c. whole wheat flour (grind your own from your storage)
1 1/2 c. white flour
2 1/2 tsp. yeast (or 1 pkg)
1/3 c. raisins or craisins
1/3 c. coarsely broken pecans or walnuts

Add boiling water and oatmeal to bread machine first. Let it sit for 15-30 minutes to "cook" first. Add the other wet ingredients, adding the egg last. Add in the dry ingredients on top, keeping salt and yeast at opposite sides of the machine. Let the machine mix and knead the bread adding a small amount of water if the dough is too stiff.

Let the machine run through the second knead cycle, then turn the machine off. Form the dough into a smooth loaf and place in greased bread pan. Let rise until approximately doubled. Bake at 350 degrees until done. Large loaf takes approximately 43 minutes; the two small loaves take only 23-25 minutes.

This bread should be a nice moist bread - perfect for toasting for breakfast... yum.
