Having spent my fair share of time in commercial kitchens, his knife is not likely razor sharp. I am sure it will shave hair off your arm, but you don't need a super knife. I buy whole chickens when they are on sale and break them down into pieces to freeze. I can break down a bird into 10 parts + carcass in about 2 minutes. I use a 30+ year old Old Hickory carbon steel boning knife.
What you need is really good grasp of the anatomy, so that you are cutting between large muscle fibers and bones - as opposed to through them.
