Mix spice mixture:
1 tsp salt
1 tsp pepper
1/4 tsp cayenne pepper
1/4 tsp paprika
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp thyme
Using boneless, skinless chicken breast, prepare as you prefer. To make this a quick meal, I typically take partially thawed chicken breasts and slice about 1/2" thick. Sprinkle both sides of the chicken with the spice mixture. cook in Skillet with 2 T. olive oil (or coconut oil) and 1 T. butter until cooked through.
Remove chicken from pan, keeping warm with a lid or foil. In the pan, pour 1/2 c. chicken broth (I often use bouillon or soup base) and 4 T. lime juice (I have been using frozen lemon juice cubes with good success). Cook down until the volume is reduced to a nice thin sauce consistency. Add the chicken back to the skillet and heat through.
Serve with rice and veges. Serve the remaining sauce on the side. YUMMY.
Notes:
The original recipe called for using 6 boneless chicken breast halves and no additional slicing -- works fine, just takes longer to cook the chicken through.
I've also made this ahead for a boy scout campout as follows:
Slice chicken as desired, sprinkle with spices, dump into ziplock bag and refrigerate until ready to cook.
We've omitted the sauce and it is still great... This is really a very versatile recipe. I keep a jar of the spice mix on hand all the time for quick meals... just increase ingredients as follows:
