I was thinking of just putting it in a crockpot and letting it simmer slowly.
How is your half? We have the half off the other one. And NOOOOO.. it is a rabbit fryer, don't crock it. Try this recipe:Glazed Skillet Rabbit
1 fryer rabbit, cut into pieces
2 tablespoons of olive oil or butter
A bit of salt and black pepper
In a cast iron pan (or whatever you have), sprinkle salt and pepper over the rabbit, then brown the rabbit in the oil/butter. Then lower the heat and cover for 20 minutes.
In a bowl mix up 1/4 cup of honey, 2 tablespoons of olive oil, dry mustard, a teaspoon or a bit more of lemon juice and paprika or Cajun spice. Mix it all together and then pour over the rabbit. Keeping the skillet uncovered, occasionally turn the rabbit over to glaze on each side.
I served it with white rice this time. It was very delicious. The last time I made this rabbit recipe was 9-9-1993 and I added notes to then which I mostly followed this time. It was so nice and tender. I can get about 2-3 meals for SweetPea and I out of one fryer rabbit.Dinner cooking up. Mmmmmm!
