Have you ever seen the Sportsman Channel show called "DEAD MEAT"?  Episode 10 is an "eating crow" episode.  According to them crows are very picky about what they eat and won't typically eat something that isn't fresh.  Their crow specialist for this episode was Jerry Tomlin and he has his own website . . .

On the show they simply cut up some breast meat, dipped it in egg, then rolled it in a mixture of flour, cracker crumbs, garlic salt and pepper, then they fried it in a 350-360 degree mixture of oil and butter . . . .  They said it had a pretty neutral flavor (most said it tasted like veal) and no unpleasant flavor, but a little chewy.
