White acre field peas / cowpeas / lady peas

I have always loved what we called white acre field peas. I understand these are a type of cowpea and are also called lady peas. So, I finally planted some this year and they are doing great.  My question is, how do I know when they are ready to harvest?

The pod plumps out when filled with peas and normally field/cowpea pods turn a darker color (like purple). Pick them when plump and turning color for fresh peas or let them dry out for dry peas or seed for next year.
