Very interesting, Greekman!

We in the southwestern US do a similar thing with the hot chile peppers each fall. However, because it is so popular, the local grocery stores offer a free service of roasting the peppers for you while you wait if you buy a bushel or more of them. They are roasted in a big motorized drum heated with propane. While some prefer to roast their peppers at home on the grill, the grocery store option is actually quite convenient.

I like to get a bushel of hot peppers roasted, take them home and then just freeze them up in small freezer bags with about 6 large peppers to a bag. I don't typically bother with skinning them before freezing, however. Once they have been frozen, the skins slide off very easily once you defrost them for use... However, you do still have to remove seeds and stems when you defrost and skin them.
